This sage liqueur recipe is made of sage tea. We add alcohol to the tea, and not sage directly to the alcohol. This way the content of thujone is smaller because thujone doesn’t extract itself in water as it does in alcohol. So it is safer to drink. The taste is pleasant and fresh.

Ingredients
40 leaves of fresh sage
200ml water
200mg sugar
4 lemons
0,5l 40% (80 proof) alcohol
Instructions
Wash, clean, dry well, and chop all sage leaves
Make a strong sage tea: boil 200ml water, add 40 leaves of sage, and cook for a few minutes on medium heat
Remove the saucepan from the heat and set it aside, allowing the sage to steep for about 30 minutes
Strain the tea and add 200mg sugar, stir until sugar is dissolved
Let it cool down
Squeeze 4 lemons and add lemon juice to sage tea
Mix tea with 0,5l of alcohol and lemon juice
Pour into a sterilized bottle and put in a dark cool place for a month
