Ingredients:

  • 200g water

  • 200g sugar (brown sugar)

  • 3 tablespoons of honey

  • herbs: thyme, sage

  • thermometer

Careful:

  • the sugar syrup becomes extremely hot, be careful not to burn yourself (not suitable for making this with small children)

  • Your mixture can burn very quickly so stir often.

  • Use a tall saucepan, because the mixture will foam and rise

Instructions:

  • put all ingredients in a tall saucepan and bring the mixture to boil while stirring

  • cook on low temperature until it reaches 130 degrees (300 F) (about 20 to 30 min)

  • how to check if the mixture is ready? Put a bit of mixture in cold water and if it hardens, it is ready

  • if it is not ready it will not harden, you will get honey herbal syrup

  • if you leave it for too long, it will burn quickly

  • once it reaches 300 degrees F remove it from the burner immediately

  • pour the mixture into a silicone mold or place drops on parchment paper with a syringe (you have to be quick, so the mixture doesn’t harden too fast)

  • let the mixture cool down completely

  • store in a jar

  • drop the leftovers in your hot tea to sweeten it
